A friend shared her vegan carrot cake recipe and it sounded so simple yet tasty enough that I really wanted to try my hand at it. Like, literally after reading her recipe.  However, I used what I had on hand therefore making it not vegan.  What I ended up with was something that was super moist and tasty! The hubster has been asking if I had made it again since that one time…I think that’s a clue? 😉

Happy (US) Thanksgiving!! 🙂

For Thanksgiving dinner (Canadian of course) I was asked to contribute something. Since I am the sibling that bakes the most, it was on me to provide dessert.  I decided to try my hand at a pineapple upside-down cake.  I compared several recipes and then tried to tweak it to be gluten free so my sister could enjoy it as well. One dessert for one family – makes sense right?

The plan was to drop off dessert at my sister’s in the morning before heading out for an afternoon of fun with just the hubster and dad ending with a nice roast turkey dinner with all the fixin’s at my sisters.  Well to sum it up, hubs, dad & I had a nice quiet buffet dinner down at the Fallsview Casino due to some unforeseen circumstances.

So how did my gluten free pineapple upside-down cake taste? According to my sister, it was ‘good’ and ‘sweet’.   I think I’ll try my hand at making this again in the future but with regular cake AND eating some of it here, at home.

It sure does look purdy though don’t it? Not bad for a first attempt.

While out at the grocery store, I couldn’t help notice the ready made cake displays which then set off a lil reminder bell in my head. I was in the grocery store chain that sells cakes from the same bakery that made our wedding cake.

Finally! After a few minutes of looking through all the cakes available I found what I thought was our flavour of wedding cake.  Close but no banana.  Lemon actually and very similar but not quite the same. I guess our flavour doesn’t come in cakelet form.

The reason that I was so excited about the cake: After tasting our wedding cake, I deemed it to be THE BEST lemon cake ever and that I’d buy it annually for each anniversary. Since we went on a mini weekend getaway with both my dad and sis for our one year anniversary, I was unable to buy the cake. Since then….its kind of been on the back burner as a want vs a need.

Maybe for Christmas, I’ll specifically order one to celebrate. Better late then never, right? 😉

My family decided to gather to celebrate Father’s Day a day early in case the festivities ran later into the evening as planned. My sister hosted a BBQ to also celebrate everyone’s birthday as well.

Seeing that I like to bake & let my “inner domestic goddess” out once in a while, I tried to find a dessert that would be worthy. My sister is currently on a gluten free/lactose free diet so I hunted the interwebz for a suitable dessert. Everything I came across called for all those specialty ingredients necessary for gluten free baking.

Then I ran across this recipe for a Gluten Free Pumpkin Applesauce Bundt Cake.  I mean, who doesnt love a bundt cake?! The shape in itself speaks volumes especially since it seems that the bundt has long since been forgotten.

…which then turned out like this for the final product.   My entire family “Ooooh’ed” and “Aaahhh’ed” when I placed this on the table and told them what it was.  I had only baked with rice flour once before and it was a flop.  I was not feeling the most confident.  My sister was delighted that it was gluten free so that she’d get to eat dessert as well.  That made me happy.

Actually, THIS made me most happy.  Everyone decided to try the cake vs the store bought apple turnovers she had bought for dessert.  Success!! I can’t wait to try this recipe again with a few suggested tweaks even though everyone said they liked it how it was made tonight.

Talk about me being one happy girl! 🙂

Happy Father’s Day to all the dad’s out there!

I got bit by the baking bug the other day and have been jonesin’ yet upon a brief web search…I couldn’t find anything that tickled my fancy.   Disappointed, I decided to focus on making a grocery list and started to take inventory of what was needed from the fridge.   As I opened the fruit drawer, it hit me….I needed to buy more apples as the ones I found in there were starting to go past their prime.    After a quick web search, I found a recipe for a fresh apple bundt cake.  Excited that I had everything listed, I quickly got to baking.

As I started following the recipe, I found myself getting more and more excited to see the end result.  After all, this was my very first bundt cake – ever!

It was baked, cooled & taste tested.  I gave a good sized portion to friends to try and review as well – they really liked it.  Both dad & hubby said it was pretty good too.  I figured I’d give it a second go later on down the road with my own modifications & started to play around with the ingredients in my mind.  I went to go grab a slice to go with my coffee and WHAM! There’s barely a sliver left. Um…its only been 2 days since I baked it. I guess dad thinks its much more then just ‘pretty good’ LOL
